I was looking this over, and was wondering if I could deploy this on Amazon EC2?

As far as having an Amazon Machine Instance (AMI), not quite yet. Anaconda and pg-grub support is needed to have an Atomic AMI. This is coming soon, and we'll let you know more as the project continues to evolve!

In the meantime, you can use the qcow2 images to deploy Atomic on OpenStack and as an EC2 HVM.

The Anaconda support bits are now present, and the RHEL Atomic Host Beta is available as an AMI
